After driving 40 minutes on windy roads, and seeing only dry and desert-like lands on both sides of road, you start to think that there's no way you'll find greenery ahead. But then you reach the small town of Chaguite Grande and everything changes in the blink of an eye. The desert disappears into the cool, humid, green environment which produces the fertile soils that are ideal for this coffee.
This makes a lovely espresso, but be warned: you must grind very fine for this one. Gareth managed great shots from a fine grind, a 6-bar lever profile, 94 degs, and a 30-second shot. The fine grind, lower pressure, and higher temperature all give this coffee the best opportunity to extract its goodness into your cup.
