Alto del Obispo is a small town in the municipality of San Agustin, South Huila. Farmers in this region are typically very small-scale enterprises, but quality-conscious and take immense pride in their coffee.
This lot was fully washed with a 38 hour dry fermentation after de-pulping. After washing the coffee is shade dried under a marquee for around 15 days, protecting the coffee from moisture and sun damage while achieving constant airflow and temperature to facilitate a stable drying process.
A lovely lip-smacking cup awaits. Definitely a classic Colombian. The orange is right up front in this one.
